OLIVE GROVE: Wedged between the mountains of the Sierra Súbbetica and the borders of the provinces of Granada and Jaén, the olive groves are located in the heart of Andalusia, Spain’s most southern region.
OLIVE TYPE: Picudo, a fresh, fruity oil; Hojiblanca, a mild, floral oil; and Picual, a peppery, bold oil.
TASTE: Delicate, mild, and fruity-green. The entry into the mouth is herbaceous, which is slowly giving way to a slight but pleasant bitterness, and a touch of spiciness at the back of the tongue. A perfect balance of herbal, fruity and peppery flavour.
FOOD PAIRING: Superb for crisp green salads, pastas, fish and seafood. Good for dipping with a crust of bread, drizzling and for everyday cooking and frying.
